Sodus Point and Carriage House Inn Featured in AAA Magazine

The Summer Edition of the AAA Member magazine features an article on the “Best Little Beach Towns on the Great Lakes”.  

We are pleased and proud that Sodus Point was listed as one of the top ten beach towns on the Great Lakes, and that the Carriage House Inn was recommended as the place to stay in Sodus Point.

Lemon Pancakes Are a Citrus Delight

These lemon pancakes are simple to make and a nice variation of breakfast pancakes. The fruit sauce makes them utterly delicious!  We hope you like them!!

Ingredients:

  •  1/2 cup lemon yogurt
  • 1 Tbsp melted butter
  • 1 egg
  • 1 cup flour
  • 1/2 cup fresh squeezed lemon juice
  • 1 to 2 Tbsp lemon zest
  • 1 tsp baking powder
  • Whisk together egg, yogurt, lemon juice and butter, and lemon zest.  Combine flour, sugar, and baking powder, then mix wet and dry ingredients together.  Spoon 1/4 cup of batter on preheated griddle.
  • Makes about 8 small pancakes

Fruit Sauce:

  • 1/2 cup sugar
  • 2 T cornstarch
  • 1/4 to 1/3 cup water
  • 2 cups fresh berries (blueberries, raspberries, blackberries)
  • 1/2 tsp lemon juice
  • Combine sugar and cornstarch in small pan.  Stir in enough water to dissolve mixture.  Add berries and cook over medium heat until thick and bubbly. Remove from heat and add lemon juice.  Spoon over pancakes.
  • Consume immediately!

Carriage House Inn Applesauce Muffins

 

One of our most requested recipes is for this moist and delicious Applesauce Muffin, a breakfast treat that is also a tribute to this apple producing area of New York.  They are easy to make, and we love them just out of the oven with a little bit of butter.  Yum Yum!!

Carriage House Inn Applesauce Muffins

  • 2 cups biscuit mix
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  •  3/4 cup applesauce
  •  3 Tbsp milk
  • 1 egg slightly beaten
  • 2 Tbsp salad oil

Combine biscuit mix, sugar and cinnamon.  Add applesauce, milk egg, and oil; mix until moistened. Fill greased 2″ muffin pans ( or use parchment paper to cup the mix) until 2/3 full, and sprinkle tops with a cinnamon/sugar mix.  Bake at 400′ F. for 16 minutes, cool slightly, then serve.

While eating, close your eyes, and remember breakfast at the Carriage House Inn!

It’s almost summer here at the Point, and we’re excited about the coming season!  Sodus Point is dressed up for the summer–all the businesses are open and ready for action.  We have been sampling the wares at local eateries, and can attest that they are ready for your patronage.

Here at the Carriage House Inn, Claudine and I have been sprucing things up for your comfort and enjoyment.  We are upgrading the mattresses, adding some vintage furniture items, and honing our breakfast menu.

2018 has been  a great  at the Point.  After all the flooding in 2017, this year was a pleasant return to normal.

Claudine and I want to thank all of our Carriage House friends, new and old, who graced us with their presence this year.  After hundreds (thousands?) of chocolate chip cookies, hundreds of breakfasts, and countless stories and songs, we are drawing an end to our 2018 season, and closing for the winter.
